The Are You Kidding Me Cake

This was fun to make!! Easy as pie, no pun intended!! This time instead of spraying baking pam I used butter and flour to grease the bundt pan. It came out great, but think next time I’ll leave the flour out of the equation and just use butter.

CAKE:

1 box golden cake mix
3 eggs
1 can pie filling

Mix with electric mixer for 2 minutes. Pour into cast iron bundt pan that has been prepped with Bakers Joy or Pam for baking (it has flour in it… works perfectly.)

Bake in preheat oven, 350 for 50 minutes. Let cool for 5 minutes and turn it out on cooling rack. Cool before glazing.

Lemon Glaze:

1 3/4 cups of confectioners sugar
1/4 cup of lemon juice
the zest of one lemon (or more!)
1 tsp of salted butter
