Stacks & Stacks of Pancakes
These are really really really good!! Don’t force your husband to eat all 12 of them! lol (But he will if you keep offering them… so what if he can’t move for the next hour!!)
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon light brown sugar
1 1/2 cups milk (I added a bit more)
1 egg
3 tablespoons butter, melted and cooled a bit
1 teaspoon vanilla
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter and vanilla; mix until smooth.
Pre heat a lightly oiled (vegetable oil) cast iron griddle or cast iron frying pan. I cooked them at just about 3 for heat. I added more oil in-between new pancakes with paper towel . Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. I use an ice cream scooper. Flip when edges are cooking and there are bubble on top.
