Roast Beef & Onion Gravy IP
This recipe is from Pressure Luck Cooking. I love his food!! So far everything I’ve tried has been delicious! This roast was donated by my mom!! Thanks Mom! I say I want to try a roast in the instant pot, and boom here’s a roast Lynda!
I did his rub, it consists of the following:
1.5 tsp of kosher salt
1.5 tsp of seasoned salt
2 tsp of black pepper
1/2 tbsp of dried parsley
1 tsp of dried thyme
1 tsp of of dried rosemary
1 tsp of onion powder
1 tsp of garlic powder
Combine and rub on all side of the beef. (Dry your beef off first…)
Turn instant pot on to saute and wait until you see it say HOT.
Chop 3 onions into chunks.
Add 2 tbsp of extra virgin olive oil and 1 TBSP butter to cover bottom of pot.
Add beef. Sear 2 minutes on each side.
Once seared, remove to plate.
Scrap off the bits of seasoning from the bottom of the pan.. you want to make sure it’s clean from sticky stuff or your BURN FOOD message will appear!! Add the onions and saute for a few minutes.
Add 1 tbsp of minced garlic
2 tbsp of Worcestershire sauce
6-8 oz of Portobello mushrooms, sliced (sadly I didn’t have any mushrooms of any kind.. this would have been so good.)
2 cups of beef broth
1 cup of a dry red wine (use one you would drink and not a red cooking wine)
Put the meat on the trivet.
Add to the pot on top of the onions and liquid.
Put the lid on.
Make sure vent is on Steaming.
Hit Pressure Cook. I did 53 minutes. I would try 60 minutes next time for this size roast, but it was VERY tender, and the thing I liked is I could slice it (thick) and it didn’t all crumble. I added the chunks back to the gravy to keep warm while the potatoes finished.
3 tbsp of cornstarch + 3 tbsp of water to form a slurry
1 oz packet of any beef gravy flavour (I used onion gravy)
This is a good old fashioned plate licker if I ever had one! You have to try it! Serve with these Greek Lemon Potatoes, it is an amazing taste combination.
