****Cranberries are TART and really do need this much sugar!****
I think to moisten this recipe up a bit, it needs a touch of liquid. Maybe a bit more butter? (I didn’t use unsalted butter) and I bet a tablespoon of lemon would tip the scales on deliciousness on this one!
I left mine in the oven too long, by about 3 minutes as I wasn’t sure what the cake top was supposed to look like. It didn’t need the extra time, but the crisp on the cake top did taste good!

Ingredients
Butter, For Greasing
2 cups (heaping) Cranberries
****I used I 340 gram (12 oz) bag of Ocean Spray Cranberries.
3/4 cups Pecans, Chopped (measure, Then Chop)
2/3 cups Sugar
1 cup Flour
1 cup Sugar
1 stick Unsalted Butter, melted
****I used salted butter and FYI, 1 stick equals 8 TBSP or 1/2 cup.
2 whole Eggs, Lightly Beaten
1 teaspoon Pure Almond Extract
****I didn't have any, I used vanilla extract
1/4 teaspoon Salt
1 Tablespoon Sugar For Sprinkling

Preheat oven to 350 degrees.
Generously butter a cake pan or pie pan.
****I used 6 enamel rounds. Therefore I will add comments in these instructions if you want to try that. Otherwise, this recipe is for a 10" cast iron skillet. I did butter the enamel rounds. You should butter the CI skillet too.

Add cranberries to the bottom of the pan. Sprinkle on chopped pecans, then sprinkle on 2/3 cup sugar. **** split out equally amount the 6 rounds.

In a mixing bowl, combine flour, 1 cup sugar, melted butter, eggs, almond extract, and salt. Stir gently to combine.

Pour batter slowly over the top in large "ribbons" in order to evenly cover the surface. Spread gently if necessary. **** split out equally amount the 6 rounds. Bake UNCOVERED.

Bake for 45 to 50 minutes. 5 minutes before removing from oven, sprinkle the surface with 1 tablespoon sugar for a little extra crunch. **** I accidentally added sugar before I baked it, no one died.

Cut into wedges and serve with ice cream or freshly whipped cream.
****Run a kitchen knife around the edge of the pie in the enameled round. Turn upside down it slides right out and is gorgeous with the berries on top.
