
Meat Pie
This was WAY better then the tough roast I made the night before. lol… that’s why I made a pie. I just cubed the roast up small, added beef consume, a can of mushroom soup, 1/2 cup cream cheese, stirred together with some 57 sauce and put in oven for about 2 hours to simmer and soften that meat up. I sautéed onions and garlic, added them for the last 30 minutes along with frozen mixed vegetables some salt, pepper and garlic powder. My pie crust is what I use for meat or dessert pies, it never fails. Once the meat pie is together, I had it in the oven 35 minutes at 425 degrees. Homemade pie crust:
2 cups all purpose flour
1 cup shortening
1 teaspoon salt
1/2 cup ice cold water
In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight. (I put the pastry in the freezer for 20 minutes)
