Handheld Meat Pies

Homemade pie crust:

2 cups all purpose flour
1 cup shortening
1 teaspoon salt
1/2 cup ice cold water
In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight. (I put the pastry in the freezer for 20 minutes but 4 hours in the fridge is likely better.)
Heat 12″ Cast Iron Skillet, add a bit of vegetable oil, chopped carrots, onion. Cook until just tender. Add chopped garlic. Add lean hamburger, cook through. Make sure it’s really well drained of fat. I used salt, pepper, garlic powder for seasoning, and a couple spoonfuls of jarred chopped ginger. Once everything is cooked, I added bbq sauce and maple syrup. Add shredded old cheddar cheese. Mix meat mixture togetter.
Roll out 6 inch circles of pastry and a pastry press for the pies.
Put a small amount of filling in lightly floured Dough Press.
Fold together to seal edges.
Brush tops with beaten egg mixed with a bit of water.
Bake in a 400 degree preheated oven for about 40 minutes on a 14″ cast iron pizza pan or until golden brown.
