Glazed Banana Bread

This is ‘No Ordinary Banana Bread’! NOBB. Hmm…

I’ve made this so many times over the years, but never in Cast Iron, until now! This bread is like an addictive drug.

I thought I should try it in cast iron… I didn’t think it would work. I thought I’d be peeling it out of the pan with a spatula! Not the case! It’s better in cast iron! And it cut cooking time in half! No big loaf pan to wait for!

Tips:

As soon as you take this out of the over, well, almost as soon as, put a cooling rack over it and flip it out. BE CAREFUL.

I added a few extras to this same recipe, a handful of coconut, 2 handfuls of chocolate chips… I think it’s even better than the glazed one! I also baked it in a 10″ CI skillet, so cooking time changed slightly, to 35 minutes.

 

Ingredients

2 to 3 very ripe bananas, peeled
1/3 cup melted butter
1 teaspoon Baking Soda
Pinch of salt
3/4 cup sugar (1/2 cup if you would like it less sweet, 1 cup if more sweet)
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups of all-purpose flour
Glaze topping About 3/4 cup walnuts 3/4 cup Craisins About 1/2 cup butter (likely more) About 3/4 cup maple syrup About 3/4 to 1 cup of icing sugar I tsp lemon juice or to taste 1 tsp of vanilla or to taste

Instructions

Preheat the oven to 350°F. Add 2-3 TBSP butter to 10" Cast Iron Skillet. Put it in the over while it's coming up to temperature. KEEP AN EYE ON IT, DON'T BURN THE BUTTER.

In a mixing bowl, mash the ripe bananas with the back of a wooden spoon until completely smooth. Stir the melted butter to the mashed bananas.

Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

Take your skillet out of the oven. If your butter happened to burn, remove it with a paper towel on the end of tongs. Add more butter, and back in the over it goes! You want the batter to hit a very hot pan when you pour it in.

Bake for 30-35 minutes at 350°F, or until a tester inserted into the center comes out clean.

Remove from oven and let cool in the skillet for a few minutes. Then remove the banana bread from the pan by putting a cooling rack over it, while holding it to the pan, flip it over. BE CAREFUL!

Glaze Topping I didn’t measure anything, but this is close. Chopped about ¾ cup walnuts and ¾ Craisins. Melted butter, (about ½ cup) in saucepan, added about ¾ cup maple syrup, keep mixing. Added the nuts and Craisins, then add about ¾ to 1 cup of icing sugar. Stir constantly over low to medium heat for a few minutes. I tsp lemon juice or to taste 1 tsp of vanilla or to taste Let cool slightly so it will thicken up a bit. Pour over entire banana bread and let it run down the sides. Cool. Slice. Eat.
