Glazed Banana Bread
This is ‘No Ordinary Banana Bread’! NOBB. Hmm…
“Moist and delicious banana bread recipe. Easy to make, no need for a mixer! Ripe bananas, butter, sugar, egg, vanilla, baking soda, and flour.” recipe by
I’ve made this so many times over the years, but never in Cast Iron, until now! This bread is like an addictive drug.
I thought I should try it in cast iron… I didn’t think it would work. I thought I’d be peeling it out of the pan with a spatula! Not the case! It’s better in cast iron! And it cut cooking time in half! No big loaf pan to wait for!
****We have Greg to thank for the glazed topping. His idea!****
Tips:
As soon as you take this out of the over, well, almost as soon as, put a cooling rack over it and flip it out. BE CAREFUL.
I added a few extras to this same recipe, a handful of coconut, 2 handfuls of chocolate chips… I think it’s even better than the glazed one! I also baked it in a 10″ CI skillet, so cooking time changed slightly, to 35 minutes.
