Fried Dill Pickles

Okay, I’ve heard of them… had them once at Harvey’s at Shannyn’s insistence, (one of the few times we all went to eat in Lethbridge). I know… not the fanciest of restaurants, but at least we were together! The ranch dip was my favourite part of them, which is why I made it again for these amazing homemade deep fried dill pickles!! Panko breadcrumbs are the secret to super crisp, non greasy taste.

****TIP****

Dry your pickles!!
Put a thin layer of panko on a plate. If it gets wet, it balls up in a clump, so best to add only what you need for 2 at a time and let it rest once breaded for several minutes before deep frying.

Ingredients

Sandwich sliced dill pickles (about 12 slices)
1-2 cups Panko Breadcrumbs
Batter 1 cup all purpose flour 1 cup milk 1 teaspoon baking powder 1 egg 1 teaspoon paprika 1/2 teaspoon black pepper 1/2 teaspoon dill Garlic powder

Instructions

Dry your pickles, both sides. Make your batter. Add your chicken to the batter to soak while you make and eat your deep fried pickles!

Fry in small batches for 3-4 minutes or until brown and crispy. I used a deep fryer on 360 degrees for 1.5 minutes. Perfection!!
