Brayden’s Triple C

YUM YUM YUM… Cocoa, Chocolate Chips and Cherries!!! This pie is delicious!! What a twist of flavour Brayden created here.. Sarah helped in this creativity with the addition of milk chocolate chips. We know you’re going to make this pie again.. hopefully it will be for us!! Though we’re sure your mom and Seb will love it too!!

Homemade pie crust:

2 cups all purpose flour
1 cup shortening
1 teaspoon salt
1/2 cup ice cold water
In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight. (I put the pastry in the freezer for 20 minutes)

Filling:
Can E.D. Smith Cherry Pie Filling

Topping:
1/2 cup cream cheese
3/4 cup icing sugar
1 Tablespoon cocoa
1 teaspoon vanilla
Cream all ingredients together, then use a hand mixer to make sure there are no lumps of cream cheese.

Method:
Using a baked and cooled pie crust that has been removed from the cast iron skillet, add cherry pie filling, top with milk chocolate chips.

Put topping in pastry bag or baggy with end clipped off and put on, being careful not to touch the crust so it stays nice and flakey.
