Banana Crunch Bread
Crunchy, and full of banana and coconut flavours!! This banana bread is a home run at our house! I didn’t have chocolate chips on hand (Okay, yes I ate them all and NOT buying anymore!!)
Preheat oven to 350ºF. Grease a No. 9 CI Skillet *Bakers Joy, and preheat the skillet (no. 9) for 5 minutes.
Topping:
Combine all ingredients in a small bowl. Set aside.
½ cup flaked coconut
¼ cup packed brown sugar
1 tbsp melted butter
1 tbsp All Purpose Flour
Batter
⅓ cup vegetable oil
¾ cup sugar
1 tsp vanilla extract
2 eggs
1 cup mashed ripe bananas (2 – 3 medium bananas)
1 3/4 cups all purpose flour
3/4 cups chocolate chips
1 1/2 tsp baking soda
¼ tsp baking powder
1 pinch salt
Batter: Mash bananas. Mix oil, sugar, vanilla and eggs in a large bowl. Add banana and stir until incorporated. Add flour, baking soda, baking powder and salt and stir until flour is incorporated. Add ¾ cups chocolate chips and stir until combined.
Pour batter into prepared skillet. Top with remaining ⅓ cup chocolate chips and cover with topping.
Bake for approximately 40 minutes.
Let cool for about 5-10 minutes, invert to cooling rack. EAT!
