Stuffed Yorkshire Pudding

This Leftover ‘STUFF’ is amazing!!

I make sure there are leftovers so I can purposely make Stuffed Yorkshire Pudding! It’s better than the roast beef dinner from the night before. Using leftovers makes it fast and it’s a 100% sure win every time.

The leftovers you’ll need are:

Roast beef (slices, chunks, tidbits.. what ever you have is fine). Simmer them in the left over gravy.
Warm Mashed Potatoes (we like it with ‘dirty mashed potatoes, recipe below…)
Gravy

The only thing you have to make is the Yorkshire Pudding, and that’s a snap using this never fail recipe.

Seems eggs are always a different size, I do 1 cup of eggs, today it was 5 small eggs (room temperature), 1 cup of milk (also rooom temp) and 1 cup of all purpose flour. Mix the eggs and milk first, then gradually add the flour or you’ll end up with lumpy batter. Don’t over mix (I used a hand whisk) then I left the mixture on the counter for about an hour prior to baking. Add enough oil to barely cover the bottom of cast iron skillets (Just enough.. you don’t need it like you’re going to fry something). I used two no. 5’s here. Divide the batter equally. If you don’t have cast iron it’s not a big deal but having individual servings is great, and there is nothing like cast iron to cook Yorkshire Pudding! (One large cast iron frying pan would also work fine, stuff it and slice into serving sizes.

I put the oven on to preheat to 475, and put the skillets with oil, in the oven while it’s preheating. When the oven gets to temperature, the skillets are smoking hot and ready. I divide the batter in 2 bowls so I just have to open the oven and pour them in, close the door. Set your timer for 15 minutes.  Keep an eye on them, every oven will be slightly different. Wait until they are a deep golden brown.

Remove Yorkshire Puddings from pans, add hot ‘dirty mashed potatoes’ to the top of the Yorkshire pudding. (Boil potatoes with skin on. Mash with 1/2 package cream cheese, about 1/4 cup butter, some milk or cream, a bit of crushed or finely diced garlic, and finely diced onion,  add salt and pepper… there are no calories here….) Add your heated gravy and roast beef over the potatoes, and top with shredded cheddar cheese. Top with more gravy. You can add horseradish, green onions, or green peas.. gotta make it look healthy!! Then more gravy.

The potatoes really make this meal amazing! We each eat a whole one, but it’s A LOT. This could easily serve a family of 4.

    Wow this looks amazing and our family loves Yorkshire pudding!
    Never thought of putting it all in one so can hardly wait to try the recipe
    My daughter had something similar to this in a restaurant in Ireland yesterday she said it was awesome 👍
