Potato, Onion & Sausage Gratin ~ Julia Child
Comfort food!! From Julia Child’s book, Mastering the Art of French Cooking, this is a perfect dish for breakfast or brunch… or supper.
2/3 cup minced onion ~ I used a very large onion, and caramelized them in oil and butter.
2 tablespoons butter
1/2 pound peeled and sliced raw potatoes ~ I used 4 large boiling potatoes.
1 cup sliced Polish sausage ~ I used Italian sausages because I had them on hand.
3 eggs, beaten
1 1/2 cups cream ~ I used 18%
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup Swiss cheese, grated ~ I only had swiss cheese slices, they worked great.
1. Preheat oven to 375° F. Cook onion slowly in butter about 5 minutes, until tender but not browned.
2. Drop potatoes in boiling salted water and cook for 6 to 8 minutes, until barely done. Drain thoroughly.
3. Butter the baking dish. Spread half of the potatoes in the bottom, then half of the onions, then all of the sausage slices, then the rest of the onions and finally the rest of the potatoes.
4. Mix the eggs, cream, salt and pepper well. Pour over the potato dish, shaking pan gently to distribute liquid.
5. Sprinkle the grated cheese over all. Bake 30 to 40 minutes in upper third of the oven until top is nicely browned. Allow to sit on a cooling rack a few minutes to set up before serving.
