Cream Cheese Maple Syrup Glazed Banana Bread

  • 3 very ripe bananas, peeled
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups of all-purpose flour

Preheat the oven to 350°F (175°C), and well butter 2 cast iron loaf pans or 1 – 10″ cast iron skillet

In a mixing bowl, mash the ripe bananas with a wooden spoon until completely smooth. Stir the melted butter into the mashed bananas.

Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.

Pour the batter into your prepared loaf pans. Bake for 30-35 minutes at 350°F, or until a toothpick inserted into the center comes out clean.

Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely.

Top one loaf with cream cheese frosting.

Put the other loaf on top. I glazed it while the glaze was still warm.

Glaze topping:

On stop top, in CI sauce pan, I used about 3/4 cup walnuts 3/4 cup Craisins About 1/2 cup butter (likely more) About 3/4 cup maple syrup About 3/4 to 1 cup of icing sugar I tsp lemon juice or to taste 1 tsp of vanilla or to taste…

Cream Cheese Filling:

I didn’t measure, so do it to your taste.  1/2 package of cream cheese, and about 1/4 cup of butter, about a cup of icing sugar mix until it’s a good, spreadable, smooth consistency.
